BBQ Art Co. started with one conviction — that barbecue deserves better. Better ingredients, better technique, and a deeper respect for the craft. Every plate we serve is the result of that belief.

More Than a Food Truck

BBQ Art Co. was born from a simple but uncompromising belief: barbecue deserves to be taken seriously. Not as convenience food, not as an afterthought at a party — but as a genuine culinary art form worthy of the same attention and respect a chef gives to any great dish. We started with a smoker, a vision, and a refusal to cut corners on anything.

Based in North Port, Florida, we built something mobile by design. A food truck isn't a compromise — it's the point. It means we can go to where the people are: breweries, markets, neighborhood events, and celebrations across the Southwest Florida corridor. From Venice down to Punta Gorda, through the Sarasota corridor and into Englewood — we bring the full BBQ Art experience to the communities we love.

What makes us different starts with how we cook. We don't just smoke meat — we combine traditional low-and-slow smoking with modern sous vide precision finishing. It's a technique that almost no other BBQ operation in the area even attempts. The smoke goes in first, building the bark, deepening the smoke ring, developing the complex flavor that only comes from hours over real hardwood. Then the sous vide step locks in every molecule of moisture, guaranteeing edge-to-edge tenderness every single time. The result is brisket that doesn't just taste incredible — it tastes exactly the same every time you come back, because precision is baked into our process.

And then there's the Russian Coleslaw. It wasn't supposed to be the star — but ask anyone who's had it. We hand-shred the cabbage, slice fresh cucumbers, bell peppers, and carrots, and dress the whole thing in white vinegar with fresh dill. It's light, bright, tangy, and completely unlike anything else at a BBQ truck. People who normally skip the slaw come back and ask about it by name.

Our organic smoked chicken wings are another signature. We use certified organic, free-range chicken — because the quality of your ingredients is the ceiling of what your food can be. It starts with the wood. We select hardwoods that complement each cut's natural character, delivering clean smoke flavor without bitterness. Our meats go low and slow, holding steady temperatures for hours until the bark sets, the smoke ring deepens, and the collagen fully breaks down into pure, silky richness.

The Lithuanian-born pitmaster behind every plate. Customers know him as Art at the truck. Founder Arthur Gumirov has built BBQ Art Co. into Southwest Florida's most-reviewed BBQ operation.

“Art” on the truck

Arthur Gumirov grew up with the food his grandmother made — Lithuanian-Russian staples where every side dish had a reason and nothing went out half-finished. Hand-shredded cabbage with white vinegar and dill. Cucumbers with pink salt. The kind of food that's simple on paper and impossible to forget once you've had it done right.

Years later, after he fell hard for American BBQ, he made a decision most pitmasters never do: rather than copy the Texas, Carolinas, or Memphis playbooks, he'd build his own. Low-and-slow smoke would meet sous vide precision on every brisket. Sides would carry the Russian and Lithuanian roots his grandma cooked from. The Russian Coleslaw on the truck today is her recipe.

That's why one of the most repeated lines in our reviews is some version of “the slaw caught me completely off guard.” A reviewer named Sasha put it best: “As a Lithuanian, I was so happy to see foods that remind me of back home. BBQ Art Co. is based in North Port, Florida, located in Southwest Florida's Charlotte-Sarasota corridor. We're a mobile operation, so we travel regularly to Venice, Sarasota, Port Charlotte, Englewood, and Punta Gorda. For catering, we serve events across the entire Southwest Florida region.
Sous vide is a precision cooking method where food is vacuum-sealed and cooked at an exact, controlled temperature in a water bath. For BBQ, it means we can smoke our brisket low-and-slow (building that incredible bark and smoke ring), then finish it sous vide to lock in every drop of moisture and achieve edge-to-edge tenderness. The result is brisket that's both deeply smoky AND impossibly juicy — something that's very hard to achieve with smoke alone.
Because we believe quality starts at the source. Certified organic, free-range chicken is raised without antibiotics or synthetic growth hormones, and it genuinely tastes better. With a product as simple as a smoked chicken wing — where the meat is front and center — the quality of the bird matters enormously. We won't cut corners on ingredients, and the organic certification is one way we hold ourselves to that standard.
