For events where the food IS the event — backyard bashes, brewery anniversaries, corporate retreats, ranch parties — we tow our smokers in and fire them up on-site. Your guests smell smoke from the parking lot. The pitmaster carves brisket in front of them. It's BBQ as theater.

We source certified organic chicken, hand-select our brisket cuts, and smoke everything low and slow over real hardwood before finishing with our signature sous vide technique. That combination gives you a bark that cracks and a center that melts — texture and flavor most BBQ operations simply can't replicate.

Our sides are made from scratch — the Russian Coleslaw (hand-shredded cabbage, fresh cucumbers, white vinegar, dill) has become something of a cult item in Southwest Florida. 75 guests is our minimum to make the on-site smoker setup worthwhile. Smaller events are better served by full-service catering with off-site smoking.
We carry $2M event liability insurance and operate within all FL fire-code requirements. We can provide certificates of insurance to venues that require them.
Yes — vinyl banners and magnetic decals are easy to add. Custom branded aprons for our team are also available with 4 weeks lead time.
Most on-site events have us on-site 6–8 hours before guest arrival to fire smokers, hold temps, and run a full setup. Some long-smoke cuts (full briskets) start the night before.
