Pulled pork is the workhorse of great barbecue, and ours earns its keep. We smoke whole pork shoulders low and slow over hardwood until the collagen renders and the meat gives way at the touch of a fork. Then we pull it by hand to order — not hours ahead — so it never dries out sitting in a pan. The result is smoke-deep, juicy, and just rich enough, finished with our BBQ sauce on the side so you control how saucy it gets.

It's one of the most versatile things we make. Order it a la carte ($20 small / $35 large) for a tray of pure smoked pork, build it into a combo plate with two scratch-made sides, or pile it on a brioche bun as our Pulled Pork Sammy. It's also the base of the famous BBQ Sundae and our Mac Bowl — pulled pork layered over organic mac and cheese is a regular order at every pop-up.
