Fully Self-Contained Setup

We bring everything. Smoker, equipment, serving setup, utensils, and cleanup supplies. You don't need a kitchen, a commercial venue, or any special infrastructure. If you have outdoor space, we can make it work.

Catering FAQ

Common Questions

We recommend booking at least 2–3 weeks in advance for smaller events (up to 40 guests), and 4–6 weeks for larger events (50+ guests). Popular dates — especially weekends in season — can book several months out. Contact us as early as possible to secure your preferred date. We'll always try to accommodate last-minute requests when our schedule allows.
Yes, we require a deposit to secure your event date. The deposit amount depends on the package and event size — this will be outlined in your quote. The deposit goes directly toward your total balance and ensures the date is reserved exclusively for you.
Cancellations made 14+ days before the event date receive a full refund of the deposit. Cancellations within 7–13 days receive a 50% refund. Cancellations within 6 days of the event are non-refundable. We understand things happen — if you need to reschedule, we'll work with you whenever possible to find an alternative date.
We can work with many dietary needs. Our smoked meats (brisket, pulled pork) and Russian Coleslaw are naturally gluten-free. We can discuss specific needs during the planning process. However, all food is prepared in a shared environment, so we cannot guarantee allergen-free cooking for severe allergies. Please disclose any severe food allergies when you submit your inquiry.
Disposable serving ware is included in The Sampler package. The Pitmaster and Full Spread packages include serving equipment and setup. If you need premium or reusable tableware, we can discuss rental options or coordinate with your venue. Let us know your needs when you inquire.
Our primary service area covers North Port, Venice, Sarasota, Port Charlotte, Englewood, and Punta Gorda. We'll travel for events throughout Southwest Florida and can discuss travel fees for locations outside our primary service corridor. For large events, we're willing to travel further — reach out and we'll discuss your specific location.
Absolutely — and it's something we love doing. Recurring corporate catering is available on a schedule that works for your business, whether that's weekly, monthly, or for specific recurring events. Regular clients get priority scheduling and we can streamline the process over time. Contact us to discuss a recurring arrangement.
We're fully self-contained. We bring our smoker, all cooking equipment, serving setup, and everything we need. You don't need a kitchen, a commercial space, or any equipment on your end. All we need from you is an accessible outdoor space large enough for our setup. We handle everything from setup to cleanup.
