Public-window model: Works well for corporate open houses, community block parties, school fundraisers, and events where guests are arriving at different times. Your guests order and pay individually (or you pre-pay a flat minimum). The truck serves from its regular menu.
Private catering model: Better for weddings, milestone birthday parties, HOA appreciation events, and any gathering where you want consistent food for a defined group at a defined time. You set the menu in advance, guests don't pay at the window, and service feels seamless from the guest perspective.

Lead Time: How Far Out Do You Need to Book?
Our smoke-then-sous-vide process requires planning that begins days before your event — brisket goes into the smoker 30-plus hours before service, and the prep chain behind that takes additional days. That's the honest reason we ask for lead time, and it's also what guarantees the quality your guests will experience.
Practical lead time guidelines for North Port events:
- Neighborhood HOA events and community nights: 3 to 4 weeks minimum during peak season (October through April). Wellen Park food truck nights in particular book up — if you want us as the featured truck for a specific community event, the earlier you reach out, the better.
- Corporate lunches and office events: 2 to 3 weeks for most setups. Smaller headcounts give us more flexibility, but last-week bookings are not guaranteed.
- Private parties under 50 guests: 10 to 14 days in most cases.

What's Included in a BBQ Art Co. Food Truck Booking
When you book our truck for a private North Port event, here's what you get:
The food, obviously. Smoked brisket, pulled pork, and certified organic smoked chicken wings as protein options. Scratch-made sides — Russian Coleslaw, Smoked Baked Beans, Mac & Cheese, Cornbread — prepared fresh for every service. Setup and breakdown. We arrive 90 minutes to 2 hours before guest service to position the truck, run equipment checks, and get service-ready. We break down and clean up after service closes. Your venue should be cleaner after we leave than before we arrived.
Service staff. Truck bookings include the staff needed to run the window or buffet station for your headcount. Larger events may include additional servers for smooth throughput.
Menu consultation. Before the event, we'll have a conversation about your guest profile, dietary needs, and the serving format that works best for your space. You're not ordering off a fixed sheet — we build the plan around your event.
What's not included by default: tables and seating for guests (most venues supply these), permits for events in public parks (permit acquisition is the event organizer's responsibility), and alcohol (we don't serve it, though we're happy to be alongside a licensed bar at your event).
