If you eat gluten-free, catered events can feel like a minefield — the pasta is out, the sandwiches and wraps are out, the breaded everything is out, and you end up grazing on a sad little corner of the buffet. Here is the genuinely good news: traditional, properly made BBQ is one of the most naturally gluten-friendly cuisines there is. At its heart, BBQ is meat, smoke, salt, pepper, and time. There is no wheat in any of that.

Why Our Smoked Meats Are Naturally Gluten-Free

Our core method works in your favor. We start every cut with a simple dry rub built around salt, pepper, and spices, then smoke it low and slow over real hardwood. We do not use any wheat-based fillers, soy-sauce-style marinades, or flour-thickened mops on our core proteins. Then the meat finishes sous vide, sealed and held at a precise temperature — a clean, closed process with nothing added that would introduce gluten.

That means our brisket, our pulled pork, and our certified organic chicken wings are naturally gluten-free at their foundation. The smoke ring, the bark, the deep flavor — none of it relies on gluten to get there. For a gluten-free guest, the centerpiece of the spread is fully open territory, not a compromise.

Naturally Gluten-Friendly Sides

Sides are usually where gluten hides at a catered event, so it is worth being specific. Several of our scratch-made sides are naturally gluten-friendly, and because we make everything fresh in-house for each service, we know exactly what goes into them.

Our Russian coleslaw — a bright, dill-and-vinaigrette style that cuts through the richness of the smoked meat — contains no wheat. Our smoked baked beans are built on beans, smoke, and a from-scratch sauce. As with any side, the safest move for a guest with celiac disease is to ask us directly at booking, and we will confirm exactly which items fit your needs for that event.

A couple of honest notes, because trust matters more than marketing: cornbread is made with cornmeal but typically includes some wheat flour, so it is not gluten-free, and mac and cheese is pasta-based and therefore contains gluten. We would rather tell you that plainly than have a guest find out the hard way. The point of this article is not to claim everything is gluten-free — it is to show that a gluten-free guest can build a genuinely excellent, satisfying plate from our menu, centered on the smoked meats and the gluten-friendly sides.

Sauces and Cross-Contact

Sauces are the other place to pay attention. Many commercial BBQ sauces use ingredients that can contain gluten, so if you or your guests need to be careful, ask us which of our sauces are safe for your event and we will guide you. We are always happy to set a gluten-sensitive guest up with a sauce that works, or to keep their portion sauce-on-the-side.

For events with a guest who has celiac disease rather than a milder sensitivity, cross-contact is the real concern — shared utensils, a serving spoon that moved from the cornbread to the brisket. Give us a heads-up at booking and we can take practical steps: dedicated serving utensils for gluten-free items, plating a portion separately before the line opens, and clear labeling at the station so guests can choose confidently. We do this regularly and it is no trouble at all.

The single most important thing you can do is tell us in advance. When you reach out, simply note how many guests need gluten-free options and whether anyone has celiac disease versus a preference or milder sensitivity. With that information, we can:
